'A dish Mumbai cant function without, Batata Vada is THE fast food for you when you come to maharashtra. Learn how to make this dish at home! BATATA VADA Ingredients 4 medium potatoes (aloo), boiled and peeled 1 tablespoon oil + for deep-frying 5-6 garlic cloves 2 green chillies 1 inch ginger 5-6 fresh coriander sprigs 1 teaspoon mustard seeds ¼ teaspoon asafoetida (hing) 5-6 curry leaves ½ teaspoon turmeric powder Salt to taste 1½ cups gram flour (besan) ¼ teaspoon soda bicarbonate Red chilli garlic chutney for serving Pav for serving Method 1. Heat sufficient oil in a kadai. 2. Coarsely grind together garlic cloves, broken green chillies and chopped ginger. Add torn coriander sprigs and grind again. 3. To prepare masala, heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and let it splutter. 4. Add asafoetida and curry leaves and when curry leaves crackle, add ¼ teaspoon turmeric powder and ginger-garlic-green chilli paste and sauté for 30 seconds. 5. Put potatoes in a bowl and mash well. Add salt and mash again. Add the prepared masala and mix well. 6. Divide the potato mixture into small equal portions and shape into balls. 7. Take gram flour in a bowl. Add some water gradually and mix to make a smooth and semi-thick batter. 8. Add salt, remaining turmeric powder, soda bicarbonate and 1½ tablespoons hot oil to the batter and mix well. 9. Dip each potato ball in the batter, drop them in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 10. Serve hot with red chilli garlic chutney and pav.
